Abstract
The main aim of present study is to investigate the roles of intensive and extensive efficiencies in analysis of combustion chambers. Due to fulfill this demand, seven different bakeries located in Kashan and Qom cities are considered. For all studied bakeries different efficiencies such as intensive efficiency (oven efficiency), extensive efficiency (bakery efficiency) and combustion efficiency are calculated using empirical and analytical methods. Different bakeries in Iran include Sangak (hand-baking and machinery), Barbari (hand-baking and machinery), Taftun (hand-baking and machinery) and Lavash (just machinery). In present work for above bakeries, used energy and required energy for baking a loaf and finally different efficiencies are calculated. According to obtained results, intensive efficiency introduces function quality of oven. In another word, intensive efficiency is representative of technical characteristics of furnace. But extensive efficiency reports quality of manpower performance of bakery and technical characteristics of furnace with each other. Therefore, difference between intensive and extensive efficiencies shows nontechnical characteristics (manpower quality, management and etc.) of studied workshop should improve.
