چکیده مقاله
This study aimed to investigate the effect of maltodextrin, gum Arabic and gelatin at different ratios to microencapsulation of lime by spray dryer. The optimal formulation was evaluated in terms of physicochemical characteristics, morphology, and GC analysis. The results showed that process with 96.4% encapsulation efficiency was done successfully.
